Queen's Tea

1½ oz Empress 1908 Gin
¾ oz chilled Lavender Fog* (see below)
¼ oz Dusk simple syrup
½ oz blanc vermouth
1 oz egg white (or aquafaba)
lavender + lemon sugar rim
lavender flowers

Rim a coupe glass with a blend of lemon zest, lavender flowers, and sugar. Add your remaining ingredients to a shaker tin and shake vigorously without ice to froth egg white. Add ice to shaker tin and shake until very cold. Strain into rimmed coupe glass and garnish with more lavender flowers.

Lavender Fog

8 oz steamed macadamia milk
2 grams darjeeling tea or one tea bag
¾ oz Dusk simple syrup

Steep tea in warm milk for 6 minutes. After removing tea leaves add Dusk simple syrup and stir well.  Store in refrigerator for up to 5 days.
